If you love Chocolate Covered Cherries, you will go crazy for these chocolate cupcakes with the yummy chocolate covered cherry filling.
These are simple to make and are a hit for any occasion. Of course Valentines day is perfect for this decadent treat.
Here I used a ready to use cake mix from Betty Crocker. This is the chocolate cake with pudding in the mix. The filling is simply store bought chocolate covered cherries and the icing is our simple cream cheese icing.
You can get creative with any type of toppings for decorating the cupcake. In this shot I kept it simple with a chocolate disk and a couple of red dots.
Chocolate Covered Cherry Cupcake Recipe
Ingredients:
Chocolate cake mix
Eggs
Oil
Chocolate Covered Cherries
Cream Cheese Icing
Instructions:
Pre-heat oven to 350 degrees.
Mix chocolate cake batter according to instructions on box.
Line your cupcake pan with fluted cupcake liners.
Fill each cup approximately 1/2 to the top of the liner.
Place 1 chocolate covered cherry in center of each cup of batter.
Note: You may also fill your cupcake batter 3/4 of the way and then place the chocolate covered cherry in. This may help keep the filling more in the center of the cupcake while baking.
Because the chocolate covered cherries are dense, they will in most cases drop down closer to the bottom of the cake batter during the baking process.
After placing your chocolate covered cherry in the center of the cupcake batter, cover with more batter the rest of the way to 3/4 of the way to the top of the liner.
Bake in 350 degree oven for approximately 18 minutes or according to baking times supplied on boxed cake mix instructions for your altitude.
You will notice the bottom of the cupcake liner may be hard from the candy center dropping down.
After cooling your chocolate covered cherry cupcakes, ice them with our simple cream cheese icing recipe.

I tried your chocolate cake recipe some days ago but somehow couldn’t get the same result as you, my cake really wasn’t looking that good (but tasted fine). What sort of chocolate are you using? Maybe it’s because of the flour I used, so I used millet flour instead of normal wheat flour.
